- Pork belly500 g
- Pork skin100 g
- Shallots50 g
- Garlic cloves5 pcs
- Soy sauce100 ml
- Rice cooking wine (Michiu)50 ml
- Rock sugar30 g
- Five-spice powder1 tsp
- White pepper powder1 tsp
- Water500 ml
Instructions

Dice pork belly into small cubes (about 1 cm). Cut pork skin into strips.
1 cm cubes are the perfect bite size.

Slice shallots thinly and deep-fry until golden and crispy. Drain and set aside.

In the same pan with a little oil, fry the pork cubes until they release fat and turn slightly brown.

Add minced garlic and five-spice powder. Stir in soy sauce and rice wine.

Add rock sugar, water, pork skin, and crispy shallots. Bring to a boil.

Reduce to low heat, cover, and simmer for 40 minutes until the meat is tender.
Low and slow simmering is the key to deep flavor.
