  1. Pick tender leaves and stems of the sweet potato plant. Wash and drain thoroughly.

    Make sure the greens are completely dry — excess water makes them soggy.

  2. Smash and mince the garlic.

  3. Heat the wok until it just starts to smoke. Add oil, then immediately toss in garlic.

    The wok must be screaming hot to achieve wok hei.

  4. Add greens and stir-fry rapidly over high heat, keeping everything moving.

    Work fast — overcooked greens turn dark and limp.

    Add salt at the very end to prevent the greens from weeping water.
