  • Unsweetened soy milk1000 ml
  • Coagulant powder (nigari/gypsum)3 g
  • Cold water50 ml
  • Rock sugar50 g
  • Ginger30 g
  • Cooked peanuts100 g
  • Water500 ml

  1. Mix coagulant powder with cold water and pour it into a large pot.

    Have the coagulant ready at the bottom of the pot.

  2. Heat soy milk to 85°C (small bubbles at the edge, not yet boiling).

    Temperature is critical — too high or too low will affect the set.

  3. Pour hot soy milk into the coagulant pot from up high in one swift motion. Do NOT stir.

    The pouring force mixes it naturally — stirring disrupts the setting process.

  4. Cover and let sit undisturbed for 15 minutes until set.

  5. Slice ginger and simmer with rock sugar and water to make ginger syrup.

    The syrup is most fragrant when served warm.

  6. Scoop tofu pudding into bowls with a shallow spoon, ladle over ginger syrup, and add cooked peanuts.

    Use a flat spoon and slice horizontally from the edge to keep the tofu pudding intact.
