  1. Pour cold water into a large bowl. Place aiyu seeds in a fine muslin cloth bag.

    Use cold mineral or filtered water — tap water chlorine can prevent setting.

  2. Rub the cloth bag in the water for 10-15 minutes until the water turns viscous and slippery.

    Rub continuously and evenly for best results.

  3. Wring out the bag, then let the aiyu liquid sit at room temperature for 30 minutes to set.

  4. Refrigerate for at least 1 hour after it sets.

    Chilled aiyu has the best texture.

  5. Juice the lemon and mix with honey to make the syrup.

  6. Place crushed ice in a bowl, scoop in aiyu jelly, and drizzle with honey lemon syrup.

    Best eaten the same day — aiyu weeps water overnight.
