Ingredients (9 items)
- Thinly sliced beef300 g
- Scallions3 stalks
- Minced garlic1 tbsp
- Soy sauce1 ½ tbsp
- Rice wine1 tbsp
- Sugar0 ½ tsp
- White pepper1 pinch
- Cornstarch1 tsp
- Cooking oil2 tbsp
Instructions
- 1
Marinate the beef with 1 tbsp soy sauce, rice wine, sugar, white pepper, and cornstarch for 10 minutes.
The cornstarch locks in moisture so the beef stays tender.
- 2
Wash scallions; cut whites and greens into 3 cm sections separately. Mince the garlic.
- 3
Heat oil in a wok over high heat. Spread the beef in a single layer, sear 30 seconds, then toss until about 70% done and remove.
The beef cooks again later — overcooking now makes it tough.
High Heat - 4
Add a little more oil to the same wok, sauté garlic and scallion whites.
- 5
Return the beef, splash rice wine along the wok edge, add remaining soy sauce and scallion greens, toss over high heat.
High Heat - 6
Serve once the greens just soften — perfect over steamed rice.
Don't overcook the scallion greens; keep them crisp and fragrant.
